Smoker Recipe Evolution



Smoking has evolved as a means to preserve food before refrigerators were invented or the canning process. How old is the art of smoking? Well no one really knows for sure but it's been around a lot longer than any evidence that documents it. I've read that there's a smoking pit in China that's believed to be 5000 years old so we can safely assume that it's been around for some time.



Traditionally the food preservation would have started with either curing or brining and then the smoking process would follow on. Nowadays with the advent of refrigerators, smoking and indeed brining or curing is more concerned with flavour rather than food preservation. For me and many people it's about enjoyment too, getting the best ingredients and taking time over preparing food is a dying industry in this age of globalisation when the pace of life is so fast. Life's too short, let's slow down and savour all that's to be experience with traditional food preparation.



Curing



Curing using smoke works well for both meat and fish. The most common chemicals used for curing today include ascorbic acid (vitamin C) or sodium nitrate albeit ascorbic acid is used also to maintain the colour of the meat at the same time. In days gone by the preferred choice would have been potassium nitrite but essentially it's a salt.



Things have of course started to develop from tradition with the quest to add flavour by curing so it's now common to include some sweet flavouring with the salt such as sugar, treacle, molasses etc or to spice it up with chilli powder or cayenne pepper. The fundamental point however is that curing is a dry process.



The curing process then can take many weeks or months and the end results are well worth it. The classic commercial curing that we see day in day out comes from curing belly pork and we end up with bacon. It frustrates me that even today there's so much water in commercially prepared bacon and if this isn't a reason to try home curing, I don't know what is. It's a easy process too.



Ask your butcher for a pork belly or part of one depending on how big you want it. Rub the belly all over with a 75%:25% mixture of salt and brown sugar and add a bit of chilli or cayenne to your taste. Place the pork belly in a plastic container and bung it in the fridge for 2 months. Be patient and you'll never want to buy commercial bacon again!

Tagines is one of the popular North African dishes consumed mostly in Algeria, Morocco, and Tunisia. Also known as Tajine and sometimes mispronounced Tangine, this North African specialty has traveled all the way across the Atlantic to the kitchens in the US. Moroccan tagines are being served increasingly in specialty food or fast food restaurants all across the United States and has become quite popular.



Tagines are not just the name of the food but also the pot in which they are cooked. Tagine pots are made purely from Terra Cotta and have a shallow rimmed base. The lid of the tagines is usually conical in shape. The bottom of the pot is always glazed from the inside and this is where it comes in direct contact with the stew or food. The top part of the Moroccan tagines is glazed from the outside, so that it can assist in evaporation of the steam. As a result, the stew or food gets absorbed into the clay and the juice or gravy becomes more concentrated in nature.



There are always potters who try and make newer version of tagines especially the ones having glazed lids from the inside as well as outside. The restaurant is quite famous for its diverse offering of tagines and has around 11 varieties on the menu. They use mostly lamb, chicken, seafood and beef. Onions, preserved lemon, dry fruits, sesame seeds, nuts, eggs, peppers, tomatoes, and olives are added to the tagines apart from the usual seasonings that include cinnamon, paprika, cumin, saffron and cilantro among others. One major difference between North African or Moroccan tagines and American tagines is that the former use clarified butter called "smen" while in America only olive oil is used for preparation.



Some of the other restaurants that offer variety of tagines on their menu include L'Olive in Chicago, The Lite Touch in New York, and Oasis in Los Angeles and Mogador in New York. Perry's in Washington offers a unique tagine dish that comprises of lamb with medjool dates and pine nut couscous. Cafe Le Coq in Chicago is famous for their roasted vegetable tagines. Many restaurants offer a variety of lamb tagines including Shallots, Chicago, which is a kosher restaurant offering lamb tagine couscous with dry Mediterranean fruits.



American chefs have in a way mastered the art of mixing tagines with couscous. If you visit, Morocco or Tunisia then you will find tagine being served as a separate dish and couscous is served as a separate steamed dish. Moroccan tagines as well as couscous are often served harissa, which is a chili-based condiment, and it is exclusive to Algerian and Tunisian tagines.

Teach your children how to make ham and potato soup through cooking games

Cooking games are not only for relaxation for kids in their free time, but they are also a good way for adults to instruct them how to make a simple and easy dish. Through cooking games, the kids are able to remember all the cooking steps easily.
And today, I’d like to introduce you a cooking game named “how to make a ham and potato soup” and you can teach your children making this dish through this game.

Ingredients (Nutrition)
•3 1/2 cups peeled and diced potatoes
•1/3 cup diced celery
•1/3 cup finely chopped onion
•3/4 cup diced cooked ham
•3 1/4 cups water
•2 tablespoons chicken bouillon granules
•1/2 teaspoon salt, or to taste
•1 teaspoon ground white or black pepper, or to taste
•5 tablespoons butter
•5 tablespoons all-purpose flour
•2 cups milk
Directions
1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.

2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute.

Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.


3. Stir the milk mixture into the stockpot.

and cook soup until heated through.

And serve immediately.

Now, your children can cook the ham and potato soup with you!

Whether you know it or not, you probably have scars throughout your body. Some may be visible, whilst others are hidden from the naked eye. They come in all different variations and there are a variety of different treatment options to successfully reduce their appearance.

Treatment Options Available



You really should not have a problem when trying to find treatments to reduce the appearance of your scars. There are literally hundreds of products out there all claiming to work. The tricky part is actually finding one that does work, and that is not just spinning out lies to trick you into spending money!



Here are a few treatment options which most people have found to work:



Creams



Creams are readily available at your local drug store and there are quite a few to choose form. However, there are some which people recommend over others. Scarzone cream has been said to work and so does vitamin K. If you have darker skin, cocoa butter seems to work quite well too. Another good one which people recommend is Palmers skin Success Fade Cream. It contains vitamin E and many people have found it helpful.



There has also been a fairly recent product which a lot of people are raving about. That is Bio Oil. Bio Oil is oil which is used to treat stretch marks and scars. The results do take a while to work, but it does actually work. However, everyones skin is different and so you may have to wait a few months and if you do not see any results, change products until you find one which does work for you.



Capsules



Some people even use capsules to help their scars to fade. However, they do not swallow the capsules; they break them open and spread the liquid onto the scar. A good example is vitamin E. Many doctors give this out and you can also find them at your local drug store. It does get a little messy once you are spreading it over your scar, however some people swear by it and say that over time, their scar is now almost completely gone. Cod liver oil capsules have also been used, though it has not been proven whether or not that works yet.



Surgery



Whilst surgery is an option which many people seem to think is better, it can sometimes actually make a scar look longer. All surgery leaves a new scar which takes up to two years to mature, so the results will not be instant. However, it can change the shape of the existing scar and reduce the appearance of it quite a lot. All in all though surgery is perhaps not the best answer!



Laser Surgery



If you have a red scar then laser surgery may be able to help fade the appearance of it. Generally it is thought that by removing the top layer of skin, the scar will flatten in appearance. It does work to reduce the appearance of scars, however it can be expensive.



Overall, scars fade naturally over time, however if you really are unhappy there are several treatments available for you, the cheapest being creams. However, the very cheap option is to simply wear clothes to cover them up. Wear a long sleeve or wear a hat if you are worried about a scar on your head. This is definitely the cheapest way to go about covering up your scar!



If you do want to have them drastically reduced, laser surgery may be the answer, but before you agree to anything it is always better to talk to your doctor or dermatologist.

Hair Brushes, More Than You Ever Wanted To Know

A friend once asked me back when I had hair, "How do you know which hair brush is the right one for you?" I never really thought about it. Over the years I've tried several types of brushes, combs and such and just simply stuck with what felt good on my scalp and left my hair looking and feeling healthy, but not frizzy.



So I thought I would check it out and see for myself which commonly available hairbrushes offer the best protection and the most ease of use.



In order to carry healthy, manageable hair throughout your life, you need to learn and practice the following tips early in life and never forget them. The main goal is to protect and prevent your hair from being damaged.



Brush and comb your hair as infrequently and as gently as possible (Your fingers will do the trick). Do not use a brush on your hair when it is wet and start with a wide-toothed comb first. Be sure not to over-brush dry hair. Never twist, tousle or wring your hair dry in a towel, but instead squeeze it dry gently using your hands.



If your hair maintains a lot of static, it could be due to dry weather, dry indoor air or a fine hair type. However, you can also get static if your brush has plastic bristles or tines. In this instance, switch to a natural bristle brush or mist hair spray on the brush and restyle. Handle your hair as little as possible. Avoid direct sun exposure and don't over do coloring or perms.

As I have found over my years of brush use, all hairbrushes are not the created the same. Some are best for styling; others are ideal for creating smoothness or curvy waves. A lot of brushes are available for specific purposes. Once you find out what your needs are for your hair length, texture and style then you are on track. Check to see which type of brush your stylist uses. If you like it, buy it. This selection could change if you decide a short cut is more your style.

This brush is flat, wide and is best for brushing out long hair and creating straight, smooth styles. It can also give you a mini scalp massage. Because of its shape and size this brush should not be used to brush layers. It will never add volume, which is what layers are for.

Thermal Round Brushes



These brushes can be found in all sizes, including small, medium, large and jumbo-sized barrels. When used with the heat of a blow dryer, the smaller brushes act like rollers and create curl. The larger ones smooth out locks and add body. This is a favorite among professionals. The metal core heats up, shaping the hair from the inside out. Thermal Flat Brush



This brush acts like a flat iron, smoothing and straitening the hair when used with the heat of a blow dryer, thus leaving it with not bend or lift. In closing, be sure to look for brushes that have ball tips that are molded as part of the bristle. Ball tips that are glued or otherwise attached can pull hair and damage it. Good brushes are an investment; if they are good quality and well cared for, they should last for years and your hair will be much healthier because of the extra attention you have given to selecting the proper brushes.
