New Black Pepper Corn Bread - Hearty and Delicious

This hearty and dense corn bread is delicious when served with chili, stew, or soup. Enjoy with any meal where a spicy (but not overpowering) bread is desirable.



Ingredients:



1 1/2 cups yellow cornmeal, divided

1 1/2 teaspoon gourmet black pepper

1 teaspoon seasoning salt

1 teaspoon onion powder

1 cup boiling water

1 package fast rising yeast

1 teaspoon sugar

1/4 cup hot water

1 tablespoon olive oil

1-2 cups bread flour, divided



How to make hearty black pepper corn bread:



1) Mix one cup of the cornmeal, pepper, seasoning salt, and onion powder with the boiling water until well blended and smooth. Let the mixture cool to 120 F (about ten minutes).



2) Mix in yeast, sugar, the 1/4 cup hot water, and olive oil. Add one cup of the bread flour and mix until smooth and elastic, which should take about five minutes. Cover the bowl with a damp cloth and let rise in a warm place (free of drafts) until risen and puffy (about 45 minutes).



3) Grease a nine-inch glass pie plate with vegetable oil.



4) Knead more bread flour in until the mix is not sticky. Continue kneading on floured surface until smooth and elastic (about five minutes of kneading). Shape into a ball. Place in the plate and flatten out to fill the bottom. Cover with a towel and let rise until doubled, which should take about 50 minutes or so.



5) Score the top of the bread in a tic-tac-toe pattern. Bake at 350 F or 180 C for 35 to 45 minutes, or until bread is light brown and sounds hollow when tapped. Remove from the plate and serve warm.



Makes one pan, about ten servings.

Brief History of Cornbread



Native Americans were using ground corn for cooking long before Europeans arrived in North America. They mastered the skill of drying and grinding corn into corn meal, which is the basic component of cornbread. Corn was sacred to the Mayans, Aztecs and Incas. College Cuisine

Going to college is a grand experience. It's the first time many young adults get the chance to begin taking care of them, no matter what the consequences. One of the main things that worries parents when their child heads out into the world of college is, of course, their diet. What are they going to eat if the cafeteria closes too early? What if they don't like the cafeteria food? What if they didn't even sign up for cafeteria meals?



Parents needn't worry. College students today have developed their own underworld of cuisine, involving quite the array of foods, time-tested by students in the past, and catered specifically to college needs by clever manufacturers.



The main staple of dorm life these days is, of course, the microwave. College students take microwave food to a whole new level. The smell of microwave popcorn is right at home in a dorm, even at 3 am. I had a roommate at college who ate microwave popcorn for breakfast. Quick, easy, cheap and filling- what more could you ask for?



There is also the infamous instant Japanese noodles (the Japanese name for this product does in fact translate to "student cuisine"). One of the biggest things I learned at school was how many ways there are to eat this ubiquitous, 25 cent meal. There's the traditional method of boiling it into soup, of course.



There's also the option of straining the water out before adding the seasoning, creating a haphazard pasta meal. A friend of mine used to give away his seasoning packets to those who liked their soup extra salty, and then use the noodles mixed with cafeteria vegetables to create his own vegetable soup. There is, in fact, an entire culture devoted to forming recipes around these instant noodles. And college students might be the most creative consumers of all.



But the need for so much creativity is not as dire as it once was. Nowadays microwaves are ridiculously cheap to own, and many college students don't think twice about having one in their dorm room. This has caused manufacturers to cater to the college students' needs like never before. Macaroni and cheese that doesn't involve buying milk, and rice dinners in a bag that include all the seasonings, are a huge step forward for students living at school, where access to milk and butter (and having somewhere to keep them if you buy them) is not as easy as it looks.



Sure, not all of this instant and easy food is healthy. Some of it is downright bad for you. But parents needn't worry too much. Your child might spend a few semesters believing the food groups consist of salt, fake chicken, cheese in a pouch, and potato chips... but it will make them appreciate you all the more when they come home.

Out of 125,000 participants, men who reported drinking more than 6 cups of coffee a day lowered their diabetes risk by almost half, while women showed a risk reduction of close to 30 percent when compared to participants who didn't drink coffee. Well, first of all, BBQ did not originate in Washington, as you can probably guess. After all, man has been cooking his meat over an open fire ever since the caveman days. My favorite version1 of the origin of BBQ and one of the more believable ones--is the western cowboy version. However, before we dig in to the history (or the legend) we should probably define what real and true BBQ is:



BBQ is the process of slowly cooking meat over wood or coal. The wood or coal cannot be too hot (about 200 degrees is perfect) and gas does not count! Those who use gas grills today will have to face the facts and realize that a gas grill grills, it does not barbeque, although there are those who insist that it is really the sauce that classifies meat as barbecued meat.



Whatever definition you prefer to accept, here is the Western cowboy origin of BBQ:



The Origin of BBQ: Washington BBQ didn't start in Washington

In the late 1800's there were many cattle drives that took place. Those who drove the cattle were cowboys and those who were in charge of the cowboys were the cattle barons. The cattle barons, like so many businessmen, scrimped when it came to paying (or in this case) feeding their employees. The cattle barons would supply the cowboys with the tough meat portions. These tough meat portions were referred to as brisket and were not exactly appetizing. The cowboys found however that if the meat was left to cook very slowly over wood or coal that in 5-7 hours the meat would make a delicious meal. This however, leaves us with the question of where the tradition of sauce came from.

As mentioned above, many sources indicate that the tradition of barbecued meat marinated in various sauces originated in the southern United States before the civil war. Pigs were abundant at the time and were one of the staples of the south. Traditional BBQ made it possible to use every part of a pig and with sauces make it taste like a delicacy. Barbecue became an important part of religious, social and political functions. Barbecues also seem to be the kind of meal that both the rich and the poor alike can appreciate.

Barbeque Maintenance Tips

When purchasing your barbeque grill, think of it as an investment rather then just another item for your outdoor entertainment. You should expect this item to become a large part of your outdoor activities for many years to come. But like any other investments, proper maintenance and care is needed to ensure that your barbeque grill will work for you for many years to come.



While some maintenance and cleaning is specific to the type of barbeque grill your own (gas, electric, charcoal or smoke barbecue grill), the majority of maintenance that should be carried on does not change from grill to grill.



Step 1- Gathering The Necessary Items



You will need some common household items on hand when it comes time to clean your barbeque grill.



Brass wire grill brush

Steel wool pads, preferably that contains soap already.

Mild dish soap

Sponge or dishcloth

Spray cooking oil

Dry baking soda

Aluminum foil



Step 2- Brushing Your Grill Off



The first thing that should always be done to your grill is a routine brushing. Using your brass wire grill brush (or other brush suitable to your type of grill) you should brush off all the surfaces. By routinely brushing your barbeque grill, you will prevent any type of buildup. If buildup from food is left to long, it can become increasingly difficult to remove.



Step 3- Spray Cooking Oil



Once you are sure that your grill is free of all buildup and debris, and that your grill is completely cooled off, you will want to spray it down with a light layer of cooking oil. Spraying it down with cooking oil will prevent your barbeque grill from rusting. It is especially important to make sure your barbeque grill is completely cold, as spraying cooking oil on a hot surface may cause the oil to heat up and ignite, which could be potentially dangerous to you and your barbeque grill.



Step 4- Use Baking Soda and Aluminum Foil on Your Grill



Baking soda is a very nice cleaning and polishing agent. Once you have removed any extra debris and buildup, lightly scrubbing your barbeque grill with baking soda will give it that extra shine, similar to the day that you brought it home from the store. This can also be used on handles and knobs to remove any extra buildup that cannot be taken off with a wire brush.



Aluminum foil can also be used to keep your grill looking nice. Gently rub the aluminum foil on your grill, and you will notice that it removes grim and buildup.



Step 5- Clean Your Racks



The racks in your grill are especially important as this is where the food touches when it is cooking. You will have to use the wire brush to remove as much buildup as possible. Once you remove as much as possible, start washing the racks with dish soap. If the racks are really dirty, you may also want to use the steel wool pads. Be sure to completely rinse off all soap and residue before cooking on these racks again.



Step 6- Preventing Problems



The majority of problems that arise from barbeque grills comes from lack of cleaning and maintenance. That means if you notice something does not seem quite right with your barbeque grill, chances are it can be fixed with just a simple cleaning. Even if you clean it, and still find that it is having problems, at least you saved yourself the potential embarrassment of taking it to a professional only to find out all it needed was to be cleaned.



Finally, one method of preventing problems with your barbeque grill is protecting it from the outdoors. Smoking has evolved as a means to preserve food before refrigerators were invented or the canning process. How old is the art of smoking? Well no one really knows for sure but it's been around a lot longer than any evidence that documents it. I've read that there's a smoking pit in China that's believed to be 5000 years old so we can safely assume that it's been around for some time.



Traditionally the food preservation would have started with either curing or brining and then the smoking process would follow on. Nowadays with the advent of refrigerators, smoking and indeed brining or curing is more concerned with flavour rather than food preservation. For me and many people it's about enjoyment too, getting the best ingredients and taking time over preparing food is a dying industry in this age of globalisation when the pace of life is so fast. Life's too short, let's slow down and savour all that's to be experience with traditional food preparation.



Curing



Curing using smoke works well for both meat and fish. The most common chemicals used for curing today include ascorbic acid (vitamin C) or sodium nitrate albeit ascorbic acid is used also to maintain the colour of the meat at the same time. In days gone by the preferred choice would have been potassium nitrite but essentially it's a salt.



Things have of course started to develop from tradition with the quest to add flavour by curing so it's now common to include some sweet flavouring with the salt such as sugar, treacle, molasses etc or to spice it up with chilli powder or cayenne pepper. The fundamental point however is that curing is a dry process.



The curing process then can take many weeks or months and the end results are well worth it. The classic commercial curing that we see day in day out comes from curing belly pork and we end up with bacon. It frustrates me that even today there's so much water in commercially prepared bacon and if this isn't a reason to try home curing, I don't know what is. It's a easy process too.



Ask your butcher for a pork belly or part of one depending on how big you want it. Rub the belly all over with a 75%:25% mixture of salt and brown sugar and add a bit of chilli or cayenne to your taste. Place the pork belly in a plastic container and bung it in the fridge for 2 months. Be patient and you'll never want to buy commercial bacon again!

Tagines From Morocco Find Their Way Into US Dining Table

Tagines is one of the popular North African dishes consumed mostly in Algeria, Morocco, and Tunisia. Also known as Tajine and sometimes mispronounced Tangine, this North African specialty has traveled all the way across the Atlantic to the kitchens in the US. Moroccan tagines are being served increasingly in specialty food or fast food restaurants all across the United States and has become quite popular.



Tagines are not just the name of the food but also the pot in which they are cooked. Tagine pots are made purely from Terra Cotta and have a shallow rimmed base. The lid of the tagines is usually conical in shape. The bottom of the pot is always glazed from the inside and this is where it comes in direct contact with the stew or food. The top part of the Moroccan tagines is glazed from the outside, so that it can assist in evaporation of the steam. As a result, the stew or food gets absorbed into the clay and the juice or gravy becomes more concentrated in nature.



There are always potters who try and make newer version of tagines especially the ones having glazed lids from the inside as well as outside. Each of the Moroccan tagines has a small steam outlet, and chefs preparing the dish more often than not poke a thyme sprig or a mint sprig. There are two types of tagines, one that is made from terra cotta and one that has been made using enameled cast iron. The latter is not as effective as the terra cotta one.

The most popular and commonly eaten tagines is made using a whole chicken, with preserved lemons and olives. Sometimes the chicken is replaced by lamb, and it is combined with eggs and prunes. This preparation is quite similar to one of the tagine dishes served at the Andalous Moroccan Restaurant in Chicago. The restaurant is quite famous for its diverse offering of tagines and has around 11 varieties on the menu. They use mostly lamb, chicken, seafood and beef. Onions, preserved lemon, dry fruits, sesame seeds, nuts, eggs, peppers, tomatoes, and olives are added to the tagines apart from the usual seasonings that include cinnamon, paprika, cumin, saffron and cilantro among others. One major difference between North African or Moroccan tagines and American tagines is that the former use clarified butter called "smen" while in America only olive oil is used for preparation.



Some of the other restaurants that offer variety of tagines on their menu include L'Olive in Chicago, The Lite Touch in New York, and Oasis in Los Angeles and Mogador in New York. Perry's in Washington offers a unique tagine dish that comprises of lamb with medjool dates and pine nut couscous. Cafe Le Coq in Chicago is famous for their roasted vegetable tagines. Teach your children how to make ham and potato soup through cooking games

Cooking games are not only for relaxation for kids in their free time, but they are also a good way for adults to instruct them how to make a simple and easy dish. Through cooking games, the kids are able to remember all the cooking steps easily.
And today, I’d like to introduce you a cooking game named “how to make a ham and potato soup” and you can teach your children making this dish through this game.

Ingredients (Nutrition)
•3 1/2 cups peeled and diced potatoes
•1/3 cup diced celery
•1/3 cup finely chopped onion
•3/4 cup diced cooked ham
•3 1/4 cups water
•2 tablespoons chicken bouillon granules
•1/2 teaspoon salt, or to taste
•1 teaspoon ground white or black pepper, or to taste
•5 tablespoons butter
•5 tablespoons all-purpose flour
•2 cups milk
Directions
1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.

2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute.

Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.


3. Stir the milk mixture into the stockpot.

and cook soup until heated through.

And serve immediately.

Now, your children can cook the ham and potato soup with you!

What Are The Treatment Options Available to Reduce The Appearance of Scars?

Whether you know it or not, you probably have scars throughout your body. Some may be visible, whilst others are hidden from the naked eye. They come in all different variations and there are a variety of different treatment options to successfully reduce their appearance.



The ones which do not show up on the body are not really a problem. However, the ones that are on show for all to see are the ones which cause most people problems. Scars do not hurt, and they do not cause any medical damage, however they can cause the people who have them, a lot of mental anxiety and stress. Some people are so embarrassed by their scars, that they take drastic measures to cover them up as best as they can. In fact, most people with scars that are visible for all to see are desperate to have surgery to remove them.



However, whilst there may be several advertisements on the television and especially upon the internet, no treatment fully gets rid of scars. You can drastically reduce their appearance, but overall it is impossible to get rid of them completely. So what options are there available and just how much will the scars fade?



Treatment Options Available



You really should not have a problem when trying to find treatments to reduce the appearance of your scars. There are literally hundreds of products out there all claiming to work. The tricky part is actually finding one that does work, and that is not just spinning out lies to trick you into spending money!



Here are a few treatment options which most people have found to work:



Creams



Creams are readily available at your local drug store and there are quite a few to choose form. However, there are some which people recommend over others. Scarzone cream has been said to work and so does vitamin K. If you have darker skin, cocoa butter seems to work quite well too. Another good one which people recommend is Palmers skin Success Fade Cream. It contains vitamin E and many people have found it helpful.



There has also been a fairly recent product which a lot of people are raving about. That is Bio Oil. Bio Oil is oil which is used to treat stretch marks and scars. The results do take a while to work, but it does actually work. However, everyones skin is different and so you may have to wait a few months and if you do not see any results, change products until you find one which does work for you.



Capsules



Some people even use capsules to help their scars to fade. However, they do not swallow the capsules; they break them open and spread the liquid onto the scar. A good example is vitamin E. Many doctors give this out and you can also find them at your local drug store. It does get a little messy once you are spreading it over your scar, however some people swear by it and say that over time, their scar is now almost completely gone. Cod liver oil capsules have also been used, though it has not been proven whether or not that works yet.



Surgery



Whilst surgery is an option which many people seem to think is better, it can sometimes actually make a scar look longer. All surgery leaves a new scar which takes up to two years to mature, so the results will not be instant. However, it can change the shape of the existing scar and reduce the appearance of it quite a lot. All in all though surgery is perhaps not the best answer!



Laser Surgery



If you have a red scar then laser surgery may be able to help fade the appearance of it. Generally it is thought that by removing the top layer of skin, the scar will flatten in appearance. It does work to reduce the appearance of scars, however it can be expensive.



Overall, scars fade naturally over time, however if you really are unhappy there are several treatments available for you, the cheapest being creams. However, the very cheap option is to simply wear clothes to cover them up. Wear a long sleeve or wear a hat if you are worried about a scar on your head. This is definitely the cheapest way to go about covering up your scar!



If you do want to have them drastically reduced, laser surgery may be the answer, but before you agree to anything it is always better to talk to your doctor or dermatologist.

A friend once asked me back when I had hair, "How do you know which hair brush is the right one for you?" I never really thought about it. Over the years I've tried several types of brushes, combs and such and just simply stuck with what felt good on my scalp and left my hair looking and feeling healthy, but not frizzy.



So I thought I would check it out and see for myself which commonly available hairbrushes offer the best protection and the most ease of use.



In order to carry healthy, manageable hair throughout your life, you need to learn and practice the following tips early in life and never forget them. The main goal is to protect and prevent your hair from being damaged.



Brush and comb your hair as infrequently and as gently as possible (Your fingers will do the trick). Do not use a brush on your hair when it is wet and start with a wide-toothed comb first. Be sure not to over-brush dry hair. Never twist, tousle or wring your hair dry in a towel, but instead squeeze it dry gently using your hands.



If your hair maintains a lot of static, it could be due to dry weather, dry indoor air or a fine hair type. However, you can also get static if your brush has plastic bristles or tines. In this instance, switch to a natural bristle brush or mist hair spray on the brush and restyle. Handle your hair as little as possible. Avoid direct sun exposure and don't over do coloring or perms.



Now choose your brushes carefully.



As I have found over my years of brush use, all hairbrushes are not the created the same. Some are best for styling; others are ideal for creating smoothness or curvy waves. A lot of brushes are available for specific purposes. Once you find out what your needs are for your hair length, texture and style then you are on track. Have you tried to lighten your skin with over-the-counter lightening agents like hydroquinone but grew exasperated with waiting? Are you wondering what your options for removing age spots and acne scars will be if and when the Food and Drug Administration takes hydroquinone off the shelves? In that case, you may want to know about another skin whitener called mequinol (4-hydroxyanisole).



Even though the FDA approved the combination of mequinol and tretinoin to treat solar lentigines ("age spots" or "liver spots") back in December of 1999, it has taken almost seven years for this drug to prove its effectiveness at treating ethnic skin types.



Research conducted by dermatologist Zoe Draelos has established mequinol and tretinoin as an effective treatment for lightening age spots or sun spots in Asian, Latin/Hispanic, and African American ethnic groups.



The study involved 259 subjects and according to report in Journal of Cosmetic Dermatology, the majority of subjects experienced clinical level improvements in their skin discolorations four weeks after starting the mequinol treatment.



In addition to treating age spots, Dr. Susan Taylor of Columbia University, New York has told Skin and Allergy News that doctors should consider combination mequinol and tretinoin therapy for treating post inflammatory hyperpigmentation (PIH). Taylor explains that PIH occurs in areas of the skin that become inflamed from a skin injury, a cosmetic or surgical procedure or from acne lesions.



Mequinol safety testing



While mequinol may soon displace hydroquinone as a trusted skin lightener, the question remains, "How safe is mequinol for human use?" Mequinol is actually a hydroquinone derivative, which makes one wonder about its possible toxicity.



However, members of the American Chemistry Council have administered oral dosages of mequinol to lab rats and rabbits. The animals did not die after exposure. Such experiments make mequinol seem non-threatening. However, the FDA does not recommend combination mequinol and tretinoin for pregnant women. Plus, women who are able to become pregnant should take effective birth control measures when using this pigment correcting treatment.



Potential side effects mequinol include redness, stinging, burning, irritation, peeling and itching. Moreover, you will need to exercise caution when using mequinol if you do facial waxing or use astringents that dry the skin. And, you can't forget to use a sunscreen when using any skin lightening agent.



In the United States, the 2.0% mequinol and 0.01% tretinoin skin whitening treatment is sold under the trademark name Solage. While mequinol may soon supplant hydroquinone as a skin lightener, you will still have to visit your doctor to get a prescription in order to benefit from this drug.

Compared to silicone gel implants, saline implants are more likely to cause cosmetic problems likes rippling and wrinkling, and can be noticeable to the eye or to the touch.



Saline-filled implants are the most common implant used in the United States due to some restrictions on silicone implants, which may change, but are seldom used in other countries. For women with very little breast tissue, or for post-mastectomy reconstruction, plastic surgeons believe that silicone gel implants are the superior device; but in patients with more breast tissue, saline implants can look very similar to silicone gel implants.



Capsules of tightly-woven collagen fibers form as an immune response around a foreign body like breast implants, which tends to wall it off; capsular contracture happens when the capsule tightens and squeezes the implant. The risk and treatment of extracapsular silicone gel is still controversial; plastic surgeons agree that it's difficult to remove, but there is disagreement about the lasting health effects. Countries outside of the United States have not endorsed routine MRI screening, and have taken the position that MRI's should be reserved only for cases involving suspected clinical rupture or to confirm mammographic or ultrasound studies that suggest rupture.



The age and design of the implant are important factors in rupture, but estimating rupture rates of contemporary devices has been difficult for a variety of reasons, mainly because implant designs have changed somewhat over time. One study reported that only 30 percent of ruptures in asymptomatic patients are accurately detected by experienced plastic surgeons, compared to 86 percent detected by MRI. When breast implants are removed that have been implanted for a long period of time, a mastopexy is often performed to tighten up the loose skin: this is additional surgery usually done at the same time and at an additional expense.
